Chipotle Pulled Pork Lettuce Wraps with Avocado Aioli

The avocado aioli tastes just like guacamole. Seriously, if liquid guacamole were a thing, this would be it. It adds even more flavor to the pork and cools things down a little – such a perfect combination! I’ve been putting the aioli on just about everything I can think of. Scrambled eggs, a burrito bowl that I made with cauliflower rice, and it makes a great dip for veggies!
I can’t wait to make these again – they make a great lunch, snack, and dinner. Heck, I’ll even eat these for breakfast! ?
A fun recipe that uses my slow cooker chipotle pulled pork! Stuff the pork into lettuce wraps, top with sliced avocado and drizzle with the most delicious aioli. {This recipe is dairy-free, gluten-free, Paleo, and Whole30}
Chipotle Pulled Pork Lettuce Wraps with Avocado Aioli

INGREDIENTS:
For the Avocado Aioli:

  • 1 Lime, juiced
  • 1 Clove Garlic, finely minced
  • Salt & Pepper, to taste
  • ½ an Avocado
  • 2 Tablespoons Whole30 Mayonnaise*
  • Water, for thinning if necessary

For the Lettuce Wraps:

  • 1 Avocado, sliced
  • Lime Wedges and Cilantro, for garnishing
  • 1 Head Iceburg or Butter Lettuce, broken apart into lettuce cups
  • 2 Cups Slow Cooker Chipotle Pulled Pork, warmed
Chipotle Pulled Pork Lettuce Wraps with Avocado Aioli


INSTRUCTIONS:

  1. Mash the avocado and then whisk in the mayo, lime juice, garlic, salt, and pepper. If the aioli needs to be thinner, add a little bit of water until you can drizzle it easily.
  2. Pile the pork into the lettuce cups, top with sliced avocado, drizzle with the aioli and top with cilantro and lime.

Notes
*If you're doing Whole30, this mayo is compliant. If you're able to find a store-bought mayo that complies you can certainly use that.
