WEIGHT WATCHERS TACO CASSEROLE RECIPE
With Weight Watchers, you can eat anything in moderation. I’m constantly swapping ingredients to make things more flavorful with fewer points. I follow the PointsPlus system, but I know many of you use SmartPoints. Because of that, I’m working on converting all of my recipes to PointsPlus and SmartPoints.
INGREDIENTS:
- 1 Pound ground chicken breast (originally used beef but chicken is 0 points)
- 1 Can black beans
- 1 Tbsp taco seasoning
- 2 Tbsps. fat-free
- 1/4 C. fat free sour cream
- 1/2 Diced white onion
- 1 Can whole kernel corn
- 1/2 C. fat free shredded cheddar cheese
- 1 C. diced fresh tomatoes
- 1/3 C. green onions
INSTRUCTIONS:
- Saute meat, beans, onions, taco seasoning, sauce, and corn on mediium-hiigh heat until meat is browned (or soy crumbles are thoroughly cooked).
- Spoon half your meat miixture iinto your casserole dish in an even layer, top with a thin layer of sour cream, then sprinkle with some cheese.
- Repeat. Cover with cheese.
- Bake at 350ºF for 15 mins, then serve topped with diced tomatoes and green onions.
